What's a fairly simple jazz blues solos to transcribe, specifically on guitar?

Fairly new to jazz, been playing guitar and/or bass for longer though.
After some extreme study on more advanced chords and scales as well as
being in a jazz course for high school aged people where (nearly)
everybody is better at jazz than me I've got some good theoretical
knowledge but one of my biggest problems is improvising over a jazz
blues. I need some ideas, and I've also been told transcribing is an
essential thing to do. My ear is good so not ridiculously simple but
the only jazz guitar I have is some George Benson and Wes Montgomery,
a little hard to copy the extremely fast stuff. Things to transcribe?

Doesn't have to be on guitar but it's preferable so I can steal a few
guitar specific techniques to make my own.
